The other day I wanted something sweet, and I wanted it NOW! Unfortunately, there was a case of not that many baking ingredients available at home, so I had to do with what I had at hand. Only 1 apple, 1 pear, but lots of flour (different types) and oil (not even a butter in the fridge though...).
So thinking about right proportions between liquid and the dry ingredients, and the fact I wanted something quick in the making and baking, muffins were the obvious choice. The result -> delicious!
Between me, Hubby and lil Baby J they disappeared in not even 2 whole days - and that's the best recommendation I can ever give you. If you don't like cinnamon you can easily omit it here, but it goes really well with the apple and pear. You can use different fruit too, maybe a banana, or mixed berries...?
- 75 g fine oatmeal
- 2 teaspoon baking powder
- 125 soft light brown sugar
- 2 chia/flax eggs (2 tablespoon ground chia/flax seeds with 6 tablespoon water, whisk together until thick and frothy)
- 225 ml oat or soy milk
- 100 ml sunflower oil
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- 1 large cooking apple, pealed, cored and diced
- 1 large pear, pealed, cored and diced
- Preheat the oven to 180 C. Line your muffin tray with paper muffin cases.
How to make it...

- 200 g wholemeal flour- 75 g fine oatmeal

- 225 ml oat or soy milk
- 100 ml sunflower oil

Method:
- Preheat the oven to 180 C. Line your muffin tray with paper muffin cases.
- Mix all the dry ingredients together: flour, oatmeal, baking powder, cinnamon and sugar.
- Place the chia/flax eggs, milk, oil and vanilla extract in a separate bowl and mix well together.
- Add liquid to the dry ingredients and stir until just combined - do not over mix it.
- Add diced apple and pear into the batter and gently stir together.
- Spoon your mixture into the paper cases and bake in preheated oven for about 25-30 minutes, until risen and golden brown.

- Transfer to a wire rack to cool completely and if you like sprinkle with icing sugar.
