Baked beans and sausage soup...

This is something I make almost without thinking now. It's a kind of a dish that I just put together on the days, when you need something comforting, warm, easy and quick to eat. This soup is also perfect for those days, when you have a little bit more than just a light in the fridge (or almost only the light...). We always have few cans of baked beans in the cupboard, and we also have few sausages in the freezer too, onion will find its way to the chopping board, along with some garlic and herbs. 


Even though it's kind of a 'frugal' soup, a pantry staple you could say, it's also one of my favourite. Sometimes the simplest things are truly the best, there's really no reason to "over-complicate" the food. Sometimes "less is more" - literally!

How to make it...

Ingredients:
- 2 cans of baked beans
- 1 medium onion, diced
- 2 cloves of garlic, diced
- 1 tablespoon sunflower oil
- 3 vegan sausages, thickly sliced (or slice just before serving, but it can be quite messy...)
- 1 tablespoon tomato puree
- 1/2 teaspoon dry basil, or few fresh leaves, teared
- 1/4 teaspoon dry thyme, or 1/2 teaspoon fresh leaves
- 1/2 teaspoon smoked paprika
- salt and pepper

Method:

- Take a big pot and heat the oil. 
- Fry onion and garlic, till just soft. 
- Add the sausages and fry till golden brown (you might want to take out the onion/garlic from the pot before frying the sausages, so it won't burn). 
- When your sausages are nicely brown add the baked beans and once you do it, take one of the emptied cans and fill it whole with water. 
- Add the water to your soup - the simplest "measuring trick" ever. 
- Add the tomato puree, all the herbs, paprika and season to taste (be careful with the salt, as many commercial baked beans are already quite salty, and remember that your sausages are probably too).
- Bring to the boil, lower the heat and simmer until the carrot is soft and all the different tastes had a chance to blend together nicely. 
- Try for seasoning just before serving. Serve hot.
