Who knew that this will become one of my favourite forms of baking - cupcakes. I simply can't resist a soft, sweet "mini cake", especially when they're still warm, straight from the oven, and on the side a must for me - of strong, black coffee.
- 200 g caster sugar
- 240 g plain flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 1/2 teaspoon ground cinnamon
- 240 ml oat or soy milk
- 2 aquafaba eggs (6 tablespoons aquafaba)
- 200 g apples (peeled and cut in small pieces)
- some brown sugar to sprinkle on top

Cupcakes are very handy, you have your "cake" divided into small "portions"... but then again - I can barely end at eating only one... Oh well, life is too short to deny yourself everything, including a little sweet treat from time to time ;P
How to make it...
Ingredients:
- 80 g softened vegan butter (like Flora) - 200 g caster sugar
- 240 g plain flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 1/2 teaspoon ground cinnamon
- 240 ml oat or soy milk
- 2 aquafaba eggs (6 tablespoons aquafaba)
- 200 g apples (peeled and cut in small pieces)
- some brown sugar to sprinkle on top
Method:
- Beat together the butter, sugar, flour, baking powder, salt and cinnamon on low speed until the consistency of fine bread crumbs.
- Whisk aquafaba eggs and milk and pour 3/4 of the mixture into the dry ingredients.
- Mix on low speed first, pour in the remaining milk mixture and mix on medium speed until the batter is smooth.
- Stir apples into the batter.
- Fill paper cases by about two-thirds, sprinkle with some brown sugar on top.
- Bake the cupcakes for 18-20 minutes at 190 C.
